There are some 36,000 google hits out there for the more or less literal translation: (in or to) the *chef's own style*. Don't know if that could fit the bill...

Dank je, Tina. Dat idee had ik ook (dat het wel goed klonk) al ken ik deze wereld alleen van wat ik passief opvang. Verder lijkt het me een kernachtige vertaling van wat er staat.

Thank you, Moira. 'Chef' implies expertise. I mean, he is the specialist. Because it's the Chef it must be good and special. This is how it sounds to me. The Chef embodies the quality of the place.

Thank you, writeaway. It's because of you. Your comments suggested something might be not as it should be, which prompted me to have a look at it and then I arrived at this. I don't know how or why. :-)
agree Natasha Ziada (X) : Perfect. Not the same as 'special' though - 'op de wijze van' refers to the preferred cooking method of the chef (eg steaming, grilling or pan-frying the fish). It's not necessarily his signature or specialty dish.

Dank je, Natasha. Ja, ik denk dat 'op de wijze van' verwijst naar het vakmanschap van de chef en ook naar de manier waarop hij het klaarmaakt, incl. ingrediënten, maar het is geen 'signature or specialty dish', het is algemener. Moeilijk uit te leggen.

neutral writeaway : home style is not the same as op de wijze van de chef. have you seen a dish on a menu referred to as "sole to the chef's own recipe?" I hasn't....../but it's not what is actually on a menu. the refs are an explanation, not the name of a dish
