The process of pressing telphone key pads on the basis of the letters shown to make a name which is then the number.
Name-calling seems unlikely and name-phoning seems unwieldy. Is there a better generic term?

There are probably other names for this, depending on the company offering the service, but alpha dial is fairly common.

These types of phone numbers are known as 'alpha numbers':
