I think "fruir" really means to appreciate, and I think that it in English it is more natural to make it plural, rather than treating "el público" as a single entity. "Appreciators and potential buyers".

or "lovers" as Jenni says. The original meaning of the word, still unambiguous when applied to art reception.

In this context, "un público fruidor" can mean viewers, but also implies people who enjoy and appreciate art. "Aficionado" is the closest noun I can think of that conveys appreciation and enjoyment.
