Note-crunching is when the notes are played "at the speed of light"...manner of speaking.
I can't think of a figurative way of saying it in French that would go with the context.
Some guitar solos by Steve Vai or Joe Satriani demonstrate some great note-crunching, although it is not pre-classical!
